Die Recook Die

So why do cooks hate recooks so much?
Restaurant cooking is based on rhythm and timing. It's something you have to see to truly appreciate it. When a recook is introduced into this situation it changes the rhythm or even stops it all together. I have seen a kitchen grind to a halt because of recooks. They Affect the kitchen differently depending on when they are sent back. In the slow period of service it's more like a minor speed bump. During the rush a recook can be a brick wall depending on the difficulty of the dish. At the end of the night it's like a detour that takes you hours out of your way.
There are also different degrees of recooks.
Kitchen error is always a high priority to get right. no cook worth his salt wants to have any dish come back for a recook. We pride ourselves on putting out delicious dishes consistently so a recook is like punishment for not getting it right. Too many will put you in the chefs dog house.
Server error is when a server rings a dish wrong whether it's the wrong item all together or they forget to modify the order to the guest specifications. Too many of these lands you in the chefs dog house and usually a lot of cursing. Let me tell you even the most even keel chef will go ballistic with too many recooks.
Finally there is customer error whether it's from not reading the menu or not understanding what you are ordering. All these tend to illicit one reaction . Idiot.
There is one exception for the customer. if they genuinely don't like something it is our job to make their experience great. We still hate them, but not as much.
Now saying all of this there is one important fact to understand. If it's wrong send it back no matter the reason. We would rather fix the problem and you leave happy and return than leave and never come back. Unless your an asshole and then we could care less. there is one other important note about recooks. When the server or manager ask what it is you don't like about your dish be as descriptive as possible. The more we know the easier it is to fix the problem.

If You Are IlliterateThis Does Not Concern You

In case anyone doesn't know when you go to a restaurant they give you this thing called a menu and on it are the names of the dishes they serve and a description of these dishes which includes the major items and items people tend to be allergic to in the dishes. There are occasions when things are missing on the menu, but most restaurants are constantly making sure their menus are as accurate and informative as possible. So now here it comes.
All of you browsers and half readers I have no sympathy when you get something that you didn't want because it's written on the menu. Read the description that's what it's on the menu for. The words I didn't see it on the menu is not a good excuse. Your server knows you didn't read the menu and when he brings it back to the kitchen he is going to tell the chef that so he's not eating shit the rest of the night. In case you didn't know the kitchen hates recooks. Especially the ones that are caused by idiots who don't read the menu. So please by all means read the menu. Anything you as a customer can do to make everything as simple as possible helps you get the best service and experience possible.

Food Movies

So for my first post I figured I should be Nice and gentle so I figured I'd discuss something that I enjoy which is movies dealing with food or has tons of food in them. aaaand away we go.

As a Person who cooks for a living I have to say that there are very few movies or shows that I can think of that are accurate although entertaining some may be. My all time favorite I think is Dinner Rush. It mixes gangsters and cooking what better thing is there. The cooking scenes were very realistic even if a bit stylized. Some other good ones are the Big Night which Is great. I loved the no apologies chef who would rather kick customers out than take their stupidity. Chocolat which is more of a romantic dessert movie but still good. I even liked Ratatouille and yes I know it was a cartoon, but honestly I thought it did a good job of capturing the essence of what makes a lot of people fall in love with cooking. I didn't really care for the one with Catherine Zeta Jones though she was hot as always. Another good one was Tortilla Soup even though technically it is a chick flick the cooking was great.
As far as TV shows who doesn't love Iron Chef. i actually prefer the Japanese version to the American one. I also am a fan of Top Chef, but not Hell's Kitchen. His show Kitchen Nightmares is good, but the European version is better than the American. There is also this old show that use to come on BBC called Chef that i think is pretty hilarious. Never got to see Kitchen Confidential, but I didn't hear anything good about it. Who could forget the Restaurant which made Rocco Dispirito famous and also a tool at the same time. I forgot the movie Waiting. If you've ever worked in a chain restaurant some version of the stupid shit they did probably happened. Lastly even though no cooking was involved Harold and Kumar Go To White Castles was hilarious. That's some food dedication. Besides who doesn't like white castles.
